Dear Michael,

Friday, September 14, 2007 was the five year anniversary of my wife and I. I wanted to take my wife to a special place for a romantic dinner and boy did I find one. I had eaten at a Brazilian restaurant in Costa Rica during a business trip and absolutely enjoyed the experience. I had seen advertisements for Sabor on television and, since my wife had never been to a Brazilian restaurant, I knew it would be a good choice. What I did not expect was that it would be the most pleasurable dining experience of my life. I have been to a lot of top quality restaurants in my life, in Germany, France, Switzerland, Italy, Aspen Colorado just to name a few, but Sabor is now my most cherished restaurant.

We were greeted with a friendly smile and excellent service starting at the Valet. He was very friendly and made us feel like we were arriving at a red carpet extravaganza. We walked into Sabor and were immediately greeted and seated with warmth and kindness. Our waiter immediately came to us and gave us a presentation of what we would expect from our dining experience. He was from Brazil and when he found out that I had been to Costa Rica he was exceptionally friendly. He helped us choose a very nice wine and served my wife first as ladies should be. He then told us to hit the salad bar and have fun. The flavors of the salads were enough to make my wife and I think that if this was all the restaurant had to offer that we would be happy, but, there was more. We each tasted the cheese bread and fell in love. Something that simple is what made us future patrons for sure. Then, after toasting to our anniversary, we grinned and turned over the red and green coasters. The gentlemen that served us the meat served my wife first, which again was top notch. Every piece of meat melted like butter and the flavors were incredible. I particularly noticed that the gentlemen asked us how we liked a particular cut.... My wife said medium, and he turned the skewer and carved a perfect piece of medium cooked meat. Then, when he asked me, I said rare and he turned the skewer 180 degrees and cut a perfect piece of rare cooked meat. That in itself is class and perfection. The side dishes to the meat were incredible and filling as well. Every time our wine glasses got close to empty, here was our waiter to pour us more. When the waiter took a dirty dish from the table, someone else was right behind within seconds to bring a clean plate. The service of the dinner flowed like a concerto.... My wife and I were eventually full and had turned over the coaster to red. One of the servers came to me and said, "I see that you are on red but I have not served you the house specialty". It was truly amazing to us that he knew exactly what had been served to us and what had not. We turned it green for another taste and then immediately went to red. We then shared a flan for desert which was just incredible. Our waiter came by again to fill the last glass of wine and we asked how we could make a compliment to the restaurant which is when he had you come to our table. After talking to you, we noticed that you, a general manager, began to clear a table after the patrons had left. WOW!!!

I would like to say that our experience is one we will never forget and one that we will relive over and over again. Thank you for making our anniversary special.
